經歷百年,當初只有達官貴人才可以在高級西餐廳享用的西式奶茶,逐漸演變成在冰室、茶餐廳、大排檔等平民食肆均供應的港式奶茶,一杯小小的奶茶卻能反映出香港中西飲食文化交融的特色!

沖製港式奶茶時須用上不同品種的紅茶葉,亦要選淡奶或植脂淡奶。要沖製一杯香、濃、滑俱全的港式奶茶,要經歷調配茶葉、煲茶、焗茶、撞茶、撞奶等步驟,而每位師傅沖茶手法也不同,故每杯奶茶味道也各有千秋!

After a century of time, the English-style milk tea, used to be served in high class restaurant exclusive for the rich and the distinguished, has gradually transformed into the Hong Kong-style milk tea, widely available in common people eateries, such as bing sutt (cold drinking house), cha-chaan-teng and dai-pai-dong. A small cup of milk tea is the nutshell of how food culture of the East and the West meet.

To brew Hong Kong-style milk tea, various types of black tea leaves are required. Evaporated milk or filled evaporated milk is used instead of whole milk. In order to brew a fragrant, smooth and full-bodied cup of Hong Kong-style milk tea, one needs to go through the steps of blending tea leaves, boiling and infusing the tea, force-pouring the tea and milk, etc. Different master has his own technique in brewing milk tea, which gives a unique taste to each cup.

本計劃由康樂及文化事務署非物質文化遺產資助計劃資助,非物質文化遺產辦事處主辦,並由長春社文化古蹟資源中心籌劃,非遺專車——「移動.非遺」會駛進全港中小學校園及各個社區,把不同非物質文化遺產(非遺)項目帶到大家身旁。非遺專車內設有展覽及互動設施,同時配有一系列教育及公眾節目,以有趣和互動的方式提升學生與公眾對非遺的認識,並從中學習欣賞和珍惜文化遺產。
