由於竹不良於導熱,故有很強的保溫作用,同時透氣性和疏水性都很強,當用作廚具來蒸食物時,熱力便可平均分佈。而蒸籠不論外層、內層、底部,甚或蒸籠蓋,全都是用竹來製作,故得到一眾廚師歡心,成為蒸點心時的絕配廚具!

蒸籠製作過程絕不簡單,要先以斬竹刀將竹枝破開,削皮和削去披鋒,再將竹枝夾至扁平並圍成圓形固定,這樣蒸籠第一層便算完成,如此類推製作數層,再加上由竹枝縱橫交疊編織而成的底部及用幼竹條織出來的蓋面等,蒸籠才叫大功告成。

Bamboo is an excellent material in terms of heat preservation due to its strong insulation capability. It also has good permeability for air and water. For such reasons, when using it as a cookware for steaming food, the heat can be evenly distributed. The bamboo steamer is all made with bamboo for its outer layer, inner layer, bottom and cover! The bamboo steamer has become the most favoured cookware of chefs for steaming dim-sum.

It is never easy to make one bamboo steamer. With a bamboo cutter, the bamboo tubes are cut in halves. Then, the skin and the extruding parts are sliced off. After that, it was being flattened, circled and fixed. The first layer of the bamboo steamer is completed. Then, the above is repeated to create several more layers. The bottom is made by intermeshing bamboo splints while the cover is weaved with thinner bamboo strips. Now you have a complete bamboo steamer!

本計劃由康樂及文化事務署非物質文化遺產資助計劃資助,非物質文化遺產辦事處主辦,並由長春社文化古蹟資源中心籌劃,非遺專車——「移動.非遺」會駛進全港中小學校園及各個社區,把不同非物質文化遺產(非遺)項目帶到大家身旁。非遺專車內設有展覽及互動設施,同時配有一系列教育及公眾節目,以有趣和互動的方式提升學生與公眾對非遺的認識,並從中學習欣賞和珍惜文化遺產。
