岑氏兄弟兩人開始在70年代末開始從事中式唐餅，邊學邊做，直到現在已有超過30年的做餅經驗，可以說是老師博了。店舖開業初期長沙灣比現在興旺，昌華街至東京街一帶有很多搭建的「屋仔」，亦有街市和流動小販，附近亦有工業區，所以週邊的人流比較多，生意亦自然不錯。
端午節、農曆新年和中秋節的應節食品是主要業務。這段時間連唐餅也不會賣，就只會出售應節食品。岑太(細岑先生的太太)說80年代他們有推出「月餅會」，顧客可每月供指定費用(數十元)，到中秋節便可到店舖取月餅，這樣會比較便宜，而且可避免一次過花大量金錢。可是現在因社會的各種原因，已經沒有「月餅會」了。
以前顧客會購買中式唐餅作訂嫁女餅，但現今的人為方便起見，都會以餅卡代替，所以嫁女餅的生意額亦不及從前。另外，為了順應社會需求和店舖自身的發展，美其香的唐餅款式比以前多。而且岑氏兄弟更推出一些迷你版的唐餅方便顧客選購，以便嘗試不同款式。

The Shum brothers began the Traditional festive cakes business in the late 1970s. They learned their business through engaging into it for almost 30 years. With their experience, they can certainly be called old masters now. In the early days, Cheung Sha Wan was very busy. There were piles of “little houses” along Cheung Wah Street and Tung King Street. Together with the market, hawkers and an industrial area nearby, there was a good flow of people in the area. Business was very good.
Traditional festive food for the Dragon Boat Festival, the Lunar New Year and The Mid Autumn Festival is their main business focus. During those periods, they don’t sell traditional Chinese cakes but instead focusing on the festive products. Mrs. Shum told us that they once launched “Moon Cake Club” in the 1980s. Customers paid an amount of money (tens of dollars) monthly and they could get their moon cakes during Mid Autumn. This way, they price would be lower and people did not have to spend a large amount at once. However, due to various reasons, there is no longer ‘Moon cake club’ nowadays.
In the past, customers would order traditional Chinese cakes when they married their daughters. Nowadays, the custom has been replaced by cakes coupons for convenience. Therefore, traditional Chinese cakes business is not as good as before. In order to meet the need of modern society and their own business target, Mei Ki Heung Food Holdings Ltd. has developed more varieties and styles of cakes. The Shum brothers also launched a number of mini-version traditional Chinese festive cakes for customers to try and choose.
